The Best Homemade (Mini) Energy Bars


So you want to make some energy bars/bites at home, but you're not sure where to start?

Sugar=Energy. These little treats are made from ingredients high in natural sugar, so you'll probably want to eat them in moderation as a dessert or a trail snack. (I'll substitute these for a vegan brownie dessert.)

Natural sugars come from fruit, dried fruits, and carbohydrates, vegetables and dairy.

Basically anything with dried fruit as a base will get you there and you can modify to suit your taste after you make one batch.

Either way, you'll feel great about eating homemade organic snacks made from whole foods that you can make ahead of time!

In the bowl of a food processor, process about 20x, pulsing:

  • 15 dates, halved

  • 1/2 cup dried cherries(or cranberries)

  • 1/2 cup chopped walnuts

  • zest of 1 lemon(optional)

then add:

  • 1 tsp. sea salt

  • 1/4 cup raw cacao

  • 1/3 cup flaked unsweetened coconut, plus another 1/3 cup for rolling

  • 3 Tab. ground flax

  • 1/4 cup raw honey

process until it looks chocolatey and holds together:

Then turn out into a medium bowl and by tablespoons, press into a ball then roll in coconut.

Press into a square silicone treat tray.

Place a piece of parchment on top of the bars and roll over the bars with a rolling pin to flatten.

Refrigerate at least an hour and wrap individually in parchment or waxed paper. Refrigerate to keep fresher longer.

Makes about 14 2-inch bars.
