Here's a recipe for a quick spread made from ground almonds. 

You can use almond meal from leftover almond milk or excess almonds that have been soaked overnight for almond milk, but the key factor here is soaking the almonds in water at least overnight to soften them.

So you want to make some energy bars/bites at home, but you're not sure where to start? 

Sugar=Energy. These little treats are made from ingredients high in natural sugar, so you'll probably want to eat them in moderation as a dessert or a trail snack. (I'll substitute these for a vegan brownie dessert.)

In the middle of a snowstorm today, I was possessed with the urge to bake. 

This is the way my mind works- dragging a snowblower up the driveway and thinking, "how many more times am I going to be doing this this winter?" ...and my thoughts turned to the 3 perfectly overly ripe bananas in the fruit bowl.

This is hands down the best vegan soup I've ever made. It will be slightly un-vegan if you use the cayenne cream garnish, but you can also use additional coconut milk to keep it all vegan. 

You can make it with water, or homemade chicken stock, but if you're thinking about using store-bought stock, just use water. This soup is super easy, and the perfect prelude or main course to a fall or winter dinner.

When you're trying to lose weight and pack the most nutrients into every meal without adding a ton of calories, whole fruits and vegetables are the obvious choice. 

I love my eggs and I'll alternate eggs or egg white veggie breakfasts one day and have an almond milk, frozen fruit, spinach and protein smoothie the next.

Here's the menu for a progressive dinner at Martis Camp for New Year's Eve 2017.
