Here's a recipe for a quick spread made from ground almonds.

You can use almond meal from leftover almond milk or excess almonds that have been soaked overnight for almond milk, but the key factor here is soaking the almonds in water at least overnight to soften them.

If you're trying to eat more vegan and vegetarian food but you're not sure where to get your protein, hummus is a tried and true standby and fortunately, we can make hummus out of any veg...

So you want to make some energy bars/bites at home, but you're not sure where to start?

Sugar=Energy. These little treats are made from ingredients high in natural sugar, so you'll probably want to eat them in moderation as a dessert or a trail snack. (I'll substitute these for a vegan brownie dessert.)

Natural sugars come from fruit, dried fruits, and carbohydrates, vegetables and dairy.

Basically anything with dried fruit as a base will get you there...

In the middle of a snowstorm today, I was possessed with the urge to bake.

This is the way my mind works- dragging a snowblower up the driveway and thinking, "how many more times am I going to be doing this this winter?" ...and my thoughts turned to the 3 perfectly overly ripe bananas in the fruit bowl.

Perfect because, for baking with bananas they should be beyond ripe.

Here's the recipe I came up with, using maple syrup and honey in place of processed sug...

Once upon a time, I interviewed with the wife of a comedian for a part time private chef job a few days a week in the Hamptons, many years before I become a private chef in Lake Tahoe

When I arrived at their home to do a trial dinner, there's the comedian sitting on a bench in a baseball hat, just chilling. He waved at me so I waved back, then from his bench he waved me into the house. No words were spoken.

I did the easiest and best thing I coul...

This is hands down the best vegan soup I've ever made. It will be slightly un-vegan if you use the cayenne cream garnish, but you can also use additional coconut milk to keep it all vegan.

You can make it with water, or homemade chicken stock, but if you're thinking about using store-bought stock, just use water. This soup is super easy, and the perfect prelude or main course to a fall or winter dinner.

This soup is better when made ahead at least one day a...

When you're trying to lose weight and pack the most nutrients into every meal without adding a ton of calories, whole fruits and vegetables are the obvious choice.

I love my eggs and I'll alternate eggs or egg white veggie breakfasts one day and have an almond milk, frozen fruit, spinach and protein smoothie the next.

But, sometimes it's tough to have a smoothie when the weather's so cold. By the time you finish it, you'll be numb!

Enter oatmeal, everyo...

Roast chicken, extra salmon, grilled veggies, a piece of steak…how many times do you end up with leftover food and you’re stuck microwaving it, or worse- throwing it out?

How about planning for leftovers, so you’re making more than one meal at a time?

I always make double the amount of what I need to serve, just so I can have a few extra meals with little effort.

For instance, with extra steak you can make: fajitas, steak salad with red and yellow peppers, av...

As an organic private chef and caterer, food is my life. I don’t take shortcuts when it comes to nutrition because there are so many easy ways to get extra nutrients into food.

This article can also be found at the Galena Times website at www.galenatimes.com

1.  Spinach is one of the most nutritious all around sneaky food fix that there is. It should be lightly cooked to best access nutrients and reduce oxalic acid content, and when sautéed preserves more n...
